Ingredients (8 portions)

Basic:

Onion (red) 1 pc
Salt to taste
Ground black pepper to taste
Water 100 ml
Walnuts 50 g
Potato 2 pc
Beet 1 pc
Vinegar (9%) 100 ml
Mayonnaise 180 g
Chicken eggs 6 pc
Prunes 100 g
Green pea (canned) 100 g
Chicken legs (1 large or 2 thighs) 1 pc

How to make Graf salad? Prepare all the necessary ingredients. Boil eggs, beets, potatoes in advance. Also boil the chicken in advance in salted water with bay leaf. Instead of red onions, you can use regular onions. Choose good quality peas; they should be soft and not reconstituted from dryness. It is advisable to choose soft prunes so as not to soak them in water.

Finely chop a large head of red onion and add 100 ml of 9% vinegar and 100 ml of water. Leave the onions to marinate.

Remove the chicken from the bone and finely chop or shred. Take a serving ring for assembling salad or a split ring for a cake with a diameter of 20 cm and place the sliced ham in it as the first layer. Sprinkle some ground black pepper on top.

Drain the liquid from the onions. Divide the pickled onion into three equal parts. Spread one part of the onion over the chopped chicken.

Lubricate the layer of onion with mayonnaise, lightly tamping the salad with a spoon near the walls of the mold (ring) so that after removing it the salad has a beautiful, neat appearance.

Place the next layer of grated potatoes. Salt and pepper to taste.

Place the second part of the pickled onion on top of the potatoes.

Lubricate with mayonnaise.

Next, lay out the boiled beets, grated on a coarse grater.

Place the remaining pickled onions on the beet layer.

Finely chop the prunes and walnut kernels.

Divide the hard-boiled eggs into whites and yolks. Grate the whites on a coarse grater and place them in a new layer of salad, lightly brushing with mayonnaise.
