Recipe instructions

Step 1

Step 1
How to make a salad with arugula, tomatoes and shrimp? Very simple! To begin, prepare the necessary ingredients according to the list. You can take whatever shrimp you like, and also add other seafood, such as mussels, squid, etc. I have king prawns. You can use regular or cherry tomatoes. I have cherry tomatoes — the salad turns out more beautiful with them. You can add or replace the vegetable part to your liking.

Step 2

Step 2
Remove the head and shell from the shrimp. If the shrimp are frozen, scald them with boiling water.

Step 3

Step 3
Cut cherry tomatoes into halves. If you have a regular tomato, then cut it into slices. You need dense tomatoes. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Step 4

Step 4
Grate the cheese on a coarse grater. Iʼve been using a Korean carrot grater lately, I like the shape of the shavings. Any cheese is suitable, from ordinary Russian to suluguni. You can also use Parmesan or mozzarella. The main thing is that the cheese is tasty.

Step 5

Step 5
Wash and dry the arugula. Tear large leaves with your hands. Instead of arugula, you can use other greens to taste. A ready-made mixture of lettuce leaves works well.

Step 6

Step 6
Cut the garlic and chili pepper into slices. You can remove the seeds from chili peppers to reduce the heat. If you wish, you can omit the chili pepper altogether.

Step 7

Step 7
Heat olive oil in a frying pan over medium heat. Add garlic and chili pepper and fry until golden brown. Remove the peppers and garlic from the pan.

Step 8

Step 8
Place peeled shrimp in aromatic oil and fry for about 30 seconds on each side. Transfer shrimp to a plate.

Step 9

Step 9
Now prepare all the ingredients for the dressing. I used extra virgin olive oil, but you can use any vegetable oil you like. If the honey is candied, melt it first.

Step 10

Step 10
In a bowl, mix lemon juice, olive oil, soy sauce, a little oil from the frying pan, ground pepper and salt.

Step 11

Step 11
Place arugula, shrimp and tomatoes on a plate or bowl. Top with dressing.

Step 12

Step 12
Top the shrimp, arugula and cherry salad with grated cheese. Serve immediately. Bon appetit!
