Marinated mushrooms 200 g
Chicken fillet (boiled) 150 g

How to make Hedgehog salad with carrots? Prepare the necessary ingredients. Pre-boil chicken fillet, eggs and rice. Drain the rice, making sure it is not wet. You can take homemade mayonnaise, it will turn out even tastier. Any pickled mushrooms are allowed here, I used champignons. You can also use any cheese, and black olives, the hedgehog will be more beautiful with them. You can buy Korean carrots, or you can make them yourself.

Take a wide flat dish and place a base of lettuce leaves on it. Before doing this, wash and dry the leaves well.

Finely chop the boiled chicken fillet (you can replace it with smoked or fried one). Immediately chop the mushrooms and boiled eggs, peeled. Place chopped chicken fillet on lettuce leaves in a hedgehog shape and brush with mayonnaise.

Place sliced mushrooms on top of the chicken layer. You can coat it with mayonnaise (optional, our family doesn’t like a lot of mayonnaise, and I didn’t coat the mushrooms).

Place cooked white rice in the next layer and coat it with mayonnaise.

The next layer will be boiled eggs, chopped or grated. The cheese layer will go straight onto the egg layer. To do this, grate hard or semi-hard cheese on a fine grater.

Now place the Korean carrots along the line of the hedgehog’s needles and decorate its “fur coat” with pieces of black olives.
