How to make a raw beet salad with cheese and pear? There is nothing complicated here. To begin, prepare all the necessary ingredients according to the list. It is advisable to choose beets that are young, juicy, not flaccid, with elastic skin. If the beets are small, you can take not 2, but three pieces.

Lightly heat the walnuts in a dry frying pan and chop with a knife. If desired, you can replace the nuts with cashews, hazelnuts or pine nuts. Or, instead of nuts, add peeled sunflower seeds, fried in a dry frying pan.

Crumble the cheese or cut it into small pieces. You can use any cheese, as long as it is not hard. Feta, soft brined cheese, Adyghe or curd cheese, blue cheese, brie or camembert are suitable. But keep in mind that if your cheese is quite salty, you need to add additional salt to the salad with caution.

Wash the lettuce leaves, dry and finely chop. I have frillis salad — it is juicy, easy to cut and looks beautiful. Instead of frillis, you can use other greens, for example, spinach, arugula, or a ready-made salad mix.

Peel the beets and grate them on a Korean carrot grater.

Peel the pear and remove seeds. And also grate on a Korean grater. It is advisable to choose a pear that is ripe, but of a hard variety, so that you get long, straight, fairly hard shavings. Since the pear darkens quite quickly, it is advisable to grate it last, immediately before mixing all the ingredients.

In a bowl, combine chopped grated beets and pears with shredded lettuce.

Pour lemon juice over everything, salt, pepper and stir. I repeat that you need to salt the salad based on the salinity of the cheese. If your cheese is salty, you may not need to add additional salt to the salad at all. Therefore, before adding spices, taste the cheese.
