Sweet & Spicy Shrimp and Orange Holiday Salad

Exquisite sweet and sour light salad for the holiday. We had to wait 5 hours for the shrimp to marinate. But the taste turned out great — due to the contrast of sweet caramelized orange and spicy pickled shrimp with sourness, I recommend trying it! My guests appreciated it :) You can keep the recipe for 5 hours, or marinate it overnight and cook it in the morning.

Ingredients (1 portion)

Basic:

Garlic 2 clove
Salt (You need to take very little salt, literally on the tip of a knife. you can do without it altogether. if you oversalt it, it will have a bitter-salty taste, completely unpleasant. and we need a sweetish sourness) to taste
Oranges (if you are cooking for a large number of people, you can use less oranges for the marinade) 1 pc
Vegetable oil 1 tbsp
Lettuce (depending on the serving method — from 1 to 5 leaves per 1 serving) 10 g
Sesame (You need white sesame, not black. not necessary to add, used for decoration) 5 g

For cooking, we take everything that you see in the photo in the required quantities.

Prepare the orange for marinade and serving. We cut the citrus taking into account how we are going to serve the salad. The easiest way is to peel the orange first and then cut it. If you take only 1 fruit, put the part intended for serving in the refrigerator. If you plan to marinate the shrimp overnight, you can prepare the orange for serving in the morning.

Press the garlic with a garlic press or cut it with a knife.

Squeeze the orange intended for the marinade into a deep dish with shrimp. Add chopped garlic, salt and pepper. Mix carefully, cover with cling film/put in a container with an airtight lid and put in the refrigerator to marinate for 5 hours. You can marinate the shrimp overnight and cook them in the morning. But you shouldn’t marinate for longer than 12 hours.

When the shrimp are marinated, pour vegetable oil into a deep frying pan (it is better to take one with a thick bottom) and put it on the fire. You only need a little oil, 1 tablespoon or even less! When it is hot, put the shrimp in the pan along with the marinade. While they are frying, be sure to stir them, especially at the end of frying, so as not to burn. If you need to make the salad more dietary, do not add oil and just boil the shrimp for min. 5 in marinade.

When frying, the liquid will gradually evaporate, and after 10-15 minutes you will only have shrimp in oil without juice in the pan. Here they are ready!

Place on a plate and sprinkle with lemon juice 30 seconds after placing. Add fresh orange slices to slightly cooled shrimp.

Letʼs serve! Place lettuce leaves on a serving dish and place shrimp and oranges on them. Decorate with orange slices and salad, you can sprinkle with white sesame seeds.
