Ingredients (5 portions)

Basic:

Salt to taste
Ground black pepper to taste
Butter 40 g
White wine vinegar 500 ml
Caraway to taste
Carrot 200 g
Bulb onions 200 g
White wine 500 ml
Zander 1 kg

Any fish can be. You don’t have to fillet it, especially if it’s small.

Fillet the fish

Place the fillet on a baking sheet and bake for 15-20 minutes at 250

Set the finished fish aside

Cut the onion into half rings, carrots into strips or on a coarse grater. mix vegetables, oil, salt and spices and place in the oven for 5 minutes

Place the fish on top of the vegetables and pour in a mixture of vinegar and wine. Place in the oven and bring to a boil. Then take it out and leave it until it cools completely. Keep refrigerated. Serve cold with dry white wine.
