Hearty Meat and Mushroom Salad with Cucumbers

Very tasty, without mayonnaise, for dinner for the whole family! Salad with meat, mushrooms and cucumbers is prepared from boiled meat and fried champignons. It will take you some time to prepare, but you can take pre-prepared ingredients and just slice them nicely before serving. The salad is hearty, but at the same time light!

Ingredients (4 portions)

Basic:

Beef 400 g
Champignon 200 g
Salted cucumbers 100 g
Tomatoes 2 pc
bell pepper 2 pc
Vegetable oil 1 tbsp

Refueling:

Garlic 1 clove
Vegetable oil 3 tbsp
Lemon juice 1 tbsp
White wine vinegar 1 tsp
Ground black pepper to taste
Salt to taste

How to make a salad with meat, mushrooms and cucumbers? First, prepare the necessary ingredients. You can choose the meat for the salad according to your taste. It could be beef, like mine, or pork. The main thing is that the meat you choose after cooking is soft, juicy, and not rubbery. For me, the ideal choice is beef shank with or without the bone.

First boil the beef until tender with the addition of salt, allspice and bay leaves. Cool the finished meat and cut into small pieces. If you want to serve the salad warm, return the chopped beef to the hot broth and add to the salad just before mixing all the ingredients.

Wash the champignons, dry and cut into slices.

Heat vegetable oil in a frying pan, add mushrooms and fry, stirring occasionally, until light golden brown. If desired, you can lightly salt and pepper the mushrooms. Remove the finished champignons from the heat and cool. If you want to serve the salad warm, it is better to fry the champignons last, after the rest of the ingredients have been chopped.

Wash the bell peppers, remove the stems, cut the pulp into small oblong pieces or strips.

Wash the tomatoes, dry and cut into not very large slices. Since my tomatoes are small, I took 4 pieces. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Cut the pickled cucumbers into slices. You can replace pickled cucumbers with pickled or fresh ones.

Now that all the main ingredients are prepared, prepare the dressing. You can replace wine vinegar with apple cider vinegar, or omit it altogether. To give the dressing a sweetish note, you can add 1 tsp. honey

Peel the garlic and grate it on a fine grater or pass it through a press.

In a bowl, combine vegetable oil, wine vinegar, lemon juice, garlic, salt, pepper and whisk everything thoroughly. Vegetable oil must combine with all other ingredients.
