How to make carrot salad with walnuts and garlic? Prepare your food. If the carrots are large, then take two pieces; if they are medium-sized, take 3 pieces. Choose juicy, sweet varieties — they are best for raw salads. You can use already shelled nuts or peel them yourself.

Wash and dry the carrots very well, then peel them with a vegetable peeler — it cuts off the thinnest layer. Grate the carrots on a medium grater. It is on the medium one — grated on a coarse one, the salad will turn out to be too coarse; on a very small one it will turn into puree.

Place the grated carrots in a salad bowl. Lightly dry the walnuts in a dry frying pan — they will become more aromatic and will be further disinfected, especially if you use shelled ones. Grind them in any convenient way. You can use a chopper in a blender attachment, a rolling pin on a board, or just a knife. I ground them in a mortar. It is better if the pieces are small, then the salad will be more uniform. Add nuts to carrots.

Peel the garlic cloves and pass through a press into a salad bowl. You can also grate them on a fine grater. Adjust the amount of garlic to your taste; you can add more or less. Add mayonnaise to the salad.

Mix the salad well. I really like adding raisins to this salad — they add a sweetness that offsets the tartness of the garlic and nuts. The salad is ready, it can be served immediately or put in the refrigerator until the holiday.
