Festive Chicken and Avocado Salad Duo

The salad turns out hearty, bright and festive. For the upcoming New Year holidays, I have prepared a selection of dishes that can be used to decorate the festive table. Iʼll start with two interesting salads. Theyʼre both with avocado and chicken, but one has tomatoes and the other has grapefruit. And each one contains an interesting and tasty dressing made with fruit juice and olive oil. In my opinion, avocado does not go well with mayonnaise, although some people cook it and like it. Therefore, I season all salads with avocado with any sauces, but not with mayonnaise.

Ingredients (3 portions)

Basic:

Chicken fillet 200 g
Tomatoes 150 g
Avocado 1 pc
Onion 1 pc
Lettuce leaves 100 g
Ground black pepper to taste

Refueling:

Lime juice 2 tbsp
Vegetable oil 1 tbsp
Sugar 2 g
Sea salt 1 g

How to make avocado salad with chicken? Prepare your ingredients. Wash the lettuce leaves and tear them into small pieces with your hands.

Boil the chicken fillet until cooked. Cool and cut into small slices.

Peel the onion and cut into half rings.

Cut the tomatoes into slices.

Cut the avocado in half, remove the pit and peel the skin. Cut the pulp into small pieces. Sprinkle with lime juice immediately to prevent browning.

Combine lime juice with vegetable oil, sugar and salt. Beat lightly with a fork and leave for 5 minutes until the salt and sugar are completely dissolved.

In a salad bowl, combine chicken, avocado, tomatoes, onions and lettuce. Pour over the dressing and stir gently.
