Beet and Nut Salad with Cucumbers, Apples, and Prunes

A wonderful salad made with healthy ingredients! The Queen of Spades salad has the taste of an ordinary beet salad with mayonnaise and nuts, but additional ingredients, such as cucumbers, apples and prunes, surprisingly harmoniously complement this salad, adding special nutrition and light sourness. You can take pickled cucumbers, but still crispy market ones from a barrel are what you need! Prunes must be washed, and if they come across any seeds, they must be removed. You can take any apple, as long as it is juicy.

Beet (boiled) 400 g
Salted cucumbers 160 g
Mayonnaise 170 g
Prunes 100 g

Prepare boiled peeled beets (it is highly desirable that these are sweet and juicy root vegetables, rich dark burgundy color), barrel pickles, prunes, mayonnaise, apple, some walnuts. Pour boiling water over the prunes and set aside for now.

Grate the beets on a coarse grater and carefully place in a spacious salad bowl.

Add pickled cucumbers, cut into short strips or cubes, as well as an apple without peel and core, grated on a coarse grater to the chopped beets.

Drain the water from the prunes, cut into thin strips (or cubes if the cucumbers are chopped into cubes. Chop the walnuts and add to the salad. Salt to taste. You can add spices to taste, for example, ground black pepper.

Season the prepared salad with mayonnaise, mix and serve. This salad can be served immediately after preparation, but it is better to serve “Queen of Spades” chilled. Instead of mayonnaise, you can season the salad with just olive or any other vegetable oil — this will be the most useful and healthy salad.
