Onion 100 g

Eggs 2 pc
Carrot 100 g
Vegetable oil 90 ml
Champignon 100 g
Pickles (can be replaced with salted ones) 150 g
Mayonnaise (fat content 50%) 50 g
Chicken liver 200 g

How to make Belarusian salad with chicken liver and mushrooms? Prepare all products. Rinse the liver, peel off the films and cut into medium pieces. Wash the mushrooms and also cut into medium pieces. Cut pickled or pickled cucumbers into half circles. Wash the carrots, peel and grate on a regular grater, a Korean carrot grater, or cut into thin strips. Peel the onion and cut into thin half rings.

Fry the liver, stirring occasionally, in a preheated frying pan with about 30 ml of vegetable oil added. The heat is above medium, frying time is 7-8 minutes. At the end of the process, salt the liver a little (literally 1 pinch). There is no need to add salt at the beginning, otherwise the liver will become hard. Transfer the finished liver to a plate to cool, drain the resulting juice so that the salad does not turn out watery.

Place mushrooms in a preheated frying pan with vegetable oil (30 ml) and stir-fry over medium heat for about 5 minutes. Also transfer the finished mushrooms to a plate and let them cool.

Fry the onions and carrots over moderate heat in a preheated frying pan with vegetable oil (30 ml) for 18-10 minutes while stirring. Cool the prepared vegetables as well. Boil the eggs hard. For information on how to do this correctly, read the separate article at the link at the end of the recipe. Cool the finished eggs in cold water, peel them and cut them into medium cubes.

Place the liver, mushrooms, eggs, cucumbers and fried onions and carrots into a deep bowl or salad bowl. Add mayonnaise. You can make your own mayonnaise. You will find recipes for homemade mayonnaise after the last step.
