Salt to taste
Arugula 100 g
Beet 2 pc
Vegetable oil 2 tbsp
Dry spices to taste
Lemons (juice, or less) 0.5 pc
Brynza 150 g
Pine nuts (optional) 2 tbsp

How to make a salad of boiled beets with cheese and pine nuts? Prepare your food. Choose sweet varieties of beets; they will go better with salty cheese. Take good quality cheese, without vegetable fats. Dry herbs are suitable as spices — basil, oregano or Provençal mixture. Take any oil — both extra virgin olive oil and regular sunflower oil will do.

First of all, cook the beets. It can either be boiled or baked. Baked beets are less watery, tastier and healthier. How to bake beets in the oven? Wash it well under running water with a brush, then dry with a towel. Tear off a long piece of foil and fold it in half. Wrap the beets in foil so that there are no holes left. Bake it in the oven at 200°C for 1.5-2 hours, depending on the size, until soft.

Check the beets for readiness with a knife — it will easily pierce the root vegetable. Cool completely and then peel the roasted beets.

Cut the peeled beets into large cubes.

Prepare the dressing. To do this, mix vegetable oil with lemon juice, add dry herbs and salt to taste. Add lemon juice as per your preference.
