Summer Fresh: Young Cabbage and Sorrel Salad

Sorrel will add a slight sourness and a special zest to the salad. From greens, you can use absolutely anything that grows in your garden!

Basic:

Salt to taste
Vegetable oil 30 ml
Greenery (any seasonal) to taste
Lemons (optional) 0.25 pc
Allspice to taste
Sorrel 70 g
Young cabbage 300 g

How to make a salad with sorrel from young cabbage? Prepare all the necessary ingredients to prepare a flavorful salad. For greens, I used green young onions, dill, parsley and a few sprigs of lemon thyme in the recipe. Rinse cabbage, lemon and herbs under running water. Rinse the sorrel more thoroughly (literally every leaf) in clean water.

Chop the young cabbage into thin strips; the thinner the strips, the tastier the salad.

Dry the sorrel with paper napkins and cut into thin strips (as in the photo). The amount of sorrel can be increased or decreased depending on how sour the salad you ultimately want to get. Send the sorrel to the cabbage.

Next comes the turn of greens. Chop the onion not very coarsely and add it to the salad bowl with the rest of the ingredients. If you have very little green onions, you can use shallots, red or white salad onions.

Finely chop the parsley and dill and place in a salad bowl.

Lightly salt and season the salad with vegetable oil (it can also be olive, rapeseed or other oil). Mix all ingredients thoroughly and taste again for salt. Add salt if required.

Sprinkle the finished salad with lemon juice if you lack sourness, and also sprinkle with allspice. Garnish with thyme sprigs if desired and serve!
