Cheesy Tomato and Cucumber Salad with Sour Cream

Garlic 1 clove
Tomatoes 300 g

Any cheese 100 g

Prepare all the necessary products. The key to a delicious vegetable salad is the right vegetables. Of course, it is best to use fresh seasonal tomatoes and cucumbers, but in the off-season it is quite possible to find good tomatoes and cucumbers. Choose tomatoes by smell — they should smell like tomatoes, — be a bright, rich color. Large tomatoes and cherry tomatoes, both medium and small, are suitable for this salad. I recommend buying small cucumbers

Also, cucumbers must be elastic to the touch and smell fresh. Wash the cucumbers well. It is best to use hot water, using a special brush and vegetable washing liquid. Then dry the cucumbers, cut off the “butts” and cut them in any convenient way. I cut it into half circles. But any other cut will work just fine.

Also wash the tomatoes very well, remove the stem and cut as you like. I cut the tomatoes into slices, but you can cut them into cubes or any other convenient way.

Mix vegetables, add chopped garlic. I usually put the clove through a press, but you can also chop the garlic with a knife or grate it on a fine grater.

Salt the salad. You may also want to pepper it or add some other spices. Or maybe you prefer fresh herbs? it is quite suitable for this salad: wash it well and chop it.

Add grated cheese. It can be hard or semi-hard cheese; mozzarella or even blue cheese will also work. In the latter case, you can break it into small pieces with your hands.

Season the salad with sour cream. Choose natural sour cream, without milk fat substitute, of any fat content from 10 to 30%. Of course, you can replace sour cream with mayonnaise, but this is much less useful.
