Savory Czech-Style Sausage Appetizer

Ingredients (6 portions)

Basic:

Sausages 800 g
Pickles 100 g
Onion 2 pc
Chilli 1 pc
Garlic 60 g

Marinade:

Water 500 ml
White wine vinegar 150 ml
Vegetable oil 2 tbsp
Salt 2 tbsp
Bay leaf 1 pc
Peppercorns 12 pc
Allspice 2 pc
Carnation 3 g
Sugar 2 tbsp

How to make utopency in Czech? Prepare the necessary ingredients according to the list. You can replace sausages with bacon or sausages. You can replace white wine vinegar with apple vinegar or regular table vinegar 6-9%. To recalculate the amount of vinegar, use a special calculator, link in the “Ingredients” section in the “Vinegar” line.

Carefully remove the casing from the sausages. On one side, make deep longitudinal cuts in the sausages, but do not cut through the sausages. Keep in mind that the sausages you choose can greatly affect the final taste of the dish. For example, if you take sausages with a pronounced smoked taste, then the whole dish will also have a slight smoked taste. If you want a neutral taste, use regular sausages: poultry, pork or beef.

Cut some of the pickled cucumbers lengthwise into slices — they will be used for stuffing sausages. The rest can be cut into slices. I used gherkins, but you can use regular-sized cucumbers.

Peel the onions and cut into rings.

Cut the chili pepper into long slices and remove the seeds. If you want a spicier taste of the snack, leave the seeds. There are two types of chili pepper: red is more spicy, green is less spicy. If desired, you can adjust the amount of chili pepper to your taste, or omit it at all or replace it with sweet bell pepper.

Disassemble the head of garlic into cloves and peel it. Cut large cloves into petals.

Insert 1-2 long slices of cucumber, hot pepper and garlic into the cuts of the sausages.

Place onion slices and a couple of cloves of garlic at the bottom of a thoroughly washed jar. Place stuffed sausages in a jar. Place the remaining onions, garlic, cucumber slices and chili peppers on top. I needed two cans.

Now make the marinade. Pour water, vinegar, vegetable oil into a saucepan, add bay leaf, sugar, salt, cloves, peppercorns. Bring to a boil over medium heat and cook, stirring, for 3-5 minutes. Cool the marinade slightly.

Pour the warm marinade over the sausages. Close the jar with a lid and leave at room temperature until completely cooled. Then put the jar in the refrigerator for 7-10 days.

Serve pickled sausages with beer, vodka or other strong drinks. Bon appetit!
