Grilled Greek Souvlaki with Figs

Ingredients (5 portions)

Basic:

Olive oil (extra virgin) 4 tsp
Bacon (9 stripes) 9 pc
Feta 300 g
Sage (18 leaves) pc
Figs (18 dried figs) 18 pc

Using a small sharp knife, cut off the tops and tails of the figs. Scoop out some of the pulp from the middle.

Cut the feta into 18 equal cubes. Place one cube into each berry. For this dish, buy the lightest salted feta you can find. If that doesn’t work, replace it with soft, mild cheese.

Cut the bacon strips in half. Place a sage leaf on each and stuffed figs on top.

Wrap the berries in bacon and thread them onto wooden skewers soaked in cold water. Heat olive oil in a frying pan and fry the souvlaki for 2 minutes. from each side. Serve as a hot appetizer with dry white or red wine.
