Ingredients (4 portions)

Basic:

Fish caviar 100 g

For rice:

Round rice 1 cup
Water 1.5 cup
Rice vinegar 2 tbsp
Sugar 2 tsp
Salt 1 tsp

For filling:

Nori 4 g
Avocado 0.5 pc
Crab sticks 4 pc
Cottage cheese 50 g

How to make homemade California rolls? Prepare your food. If you can’t find rice special for sushi, any round rice will do. The main thing is that it is not steamed. The article at the link at the end of the recipe will help you choose rice for the rolls. Instead of rice vinegar, you can use 9% table vinegar.

First of all, boil the rice. Rinse the cereal and fill it with clean cold water. Set the rice to cook on the highest heat setting. When the water boils, reduce it to medium. Cook the rice until the water has completely evaporated. When it is no longer visible and “craters” appear on the surface of the cereal, remove the saucepan from the heat. Cover it first with a towel and then with a lid. In such a “bath”, the remaining liquid will be absorbed into the rice and it will be ready.

Add sugar and salt to vinegar. Stir and leave to stand for a while until they dissolve in the liquid. Pour vinegar into warm rice and stir. Leave it until it cools completely.

Prepare other foods. Cut the crab sticks lengthwise into 2 or 4 pieces, depending on their size. Instead of sticks, you can use crab meat. Read about how to choose the right crab sticks at the end of the recipe.

Peel the avocado and cut into cubes. Place the curd cheese in a pastry bag or regular bag — this will make it easier to pipette.

Take a bamboo mat and wrap it in cling film. Place a sheet of nori on it, rough side up. With wet hands, spread the completely cooled rice into a thin layer over the sheet. On the near side, leave a free edge about 1cm wide.

Carefully turn the sheet over so that the rice is on the bottom. Stepping back a little from the nearest edge, squeeze a strip of cream cheese onto the nori. Place crab sticks and avocado slices on top.

Helping yourself with a mat, roll the workpiece into a roll. You can trim the sides or, like me, slam them with a knife.

Place small fish roe on a long flat dish. Roll the finished roll over it so that the caviar sticks well on all sides. then cut the roll into 8 pieces.
