Quick Beetroot Marinade: Hot Side or Cold Salad

Snack bar, fast food, for dinner! Beetroot marinade, as in the canteen, is both a good hot side dish and a cold salad. For preparation you will need a minimum of ingredients. If you cook or bake beets in advance, the whole process will take a matter of minutes.

Ingredients (6 portions)

Basic:

Garlic 1 clove
Salt to taste
Sugar (taste) 0.5 tsp
Tomato paste 2 tbsp
Beet 500 g
Bulb onions 1 pc
Vegetable oil 2 tbsp
Vinegar (9%) to taste

How to make beetroot marinade like in the dining room? Prepare all the necessary ingredients. It is better to boil or bake beets in advance. It will have time to cool down and will be convenient to work with. Prepare the beets in any way convenient for you — in the oven, microwave, steamer, or, like me, just boil them. Take a medium or large size onion.

Wash the beets to remove any dirt, place them in a deep saucepan and cover with water. Bring to a boil over high heat and simmer on medium, covered, for an hour after boiling. Do not cut the tails so that juice does not escape through the cuts and the beets do not lose their taste. Drain the hot water and add cold water. Leave for at least 15 minutes. This way the beets are ready and cool faster.

Peel the onion, rinse and cut into small cubes. Heat a deep frying pan with a thick bottom, carefully so as not to burn yourself, pour vegetable oil into it and add chopped onion. Fry over medium heat, stirring occasionally, until soft. It took me about 3 minutes.

Peel, rinse and chop the garlic in any convenient way. I chopped it with a knife. Add tomato paste and garlic to the onion, stir and fry for another 2-3 minutes over medium heat. You can change the amount of tomato paste to your taste. I added one spoon because I thought the paste was too rich.

Peel the beets, grate them on a coarse grater and place them in a frying pan.

Stirring, fry for another 2-3 minutes.

Remove from heat, add salt, sugar and vinegar to taste.
