Salt 2 tsp

Sauce:

Garlic 2 clove
Mayonnaise 60 g
Herbal mixture g
Ground black pepper to taste

How to make fried eggplants with garlic and mayonnaise? Prepare the ingredients listed in the recipe. How to choose the right eggplant for this dish? The fruits should be medium in size with shiny dark skin. Avoid brown, wrinkled, soft or damaged vegetables. Make sure the stem is in place.

Wash the eggplants, dry them, remove the stem. Cut into circles (about 0.7-2 cm thick), trying to maintain the original shape of the vegetable.

Place the eggplants on a plate, add salt and leave for 10-15 minutes. To avoid bitter taste, salt the vegetables and leave for 30 minutes. Drain the resulting liquid and dry each eggplant slice with a napkin.

Prepare all the ingredients needed to make the sauce.

Peel the garlic and pass it through a press. In a container, combine mayonnaise with Provençal herbs, ground pepper and garlic. If for some reason you don’t like mayonnaise, replace it with sour cream (any fat content) or natural yogurt without additives.

Place the fried eggplant on a paper towel to absorb excess oil. Place them in the same order as they were placed when cutting. Let them cool slightly.
