Salt 100 g

How to salt whole herring in brine at home? Prepare all the necessary ingredients. Read about how to choose the right herring after the last step. Thaw the herring if necessary. Read about proper defrosting in a separate article at the link at the end of the recipe. Strong defrosting is not required — as soon as the fish becomes pliable, it can be salted. There is also no need to wash it and remove the gills — in the case of herring, the gills will not give off bitterness.

Prepare the brine. Pour water into a saucepan and bring it to a boil over high heat. Add salt, pepper and bay leaf (I used crushed ones) to the water and simmer everything over low heat until the salt is completely dissolved. You can simply pour the spices into a suitable container, pour boiling water over them and stir. Cool the brine to room temperature.

Immerse the fish in the brine. For this I used an enamel pan in which it was cooked. You can transfer the fish to another container of a suitable size, for example, glass, and fill it with brine. The main thing is that the fish is completely immersed in it. Cover the pan or other container with a lid or small plate so that the herring does not float, but is completely immersed in the liquid. Place the fish in the refrigerator for several days — from 2 to 4.

In two days the fish will be marinated. I got it out after four days, and what I got was a well-salted herring. Remove the finished herring from the container and place it on a board or flat dish — I have a tray.

Prepare the fish for serving. To do this, cut off the head, cut the abdomen and remove the entrails. You also need to use a knife to remove the thin black film from the inside, which can cause bitterness. The herring is ready, all that remains is to cut it into portions. When serving, you can pour vegetable oil over the herring and garnish with white or green onions. Bon appetit!
