How to make snack eclairs with filling? Prepare all the necessary ingredients. Remove the eggs from the refrigerator in advance; they should be at room temperature. Choose small eggs.

Cut the butter into pieces and place in a saucepan. Add water, milk, salt. Place the pan over moderate heat. How to choose a pan, read the article at the end of this recipe.

Heat the mixture to a boil, stirring constantly until the butter completely melts.

Sift the flour first. As soon as the liquid mixture boils, immediately add all the flour, while actively stirring the mass. You may need less or more flour, check the consistency. Read about the properties of flour in a separate article at the end of the recipe.

The mass should be homogeneous and move away from the walls of the pan. Warm the dough over low heat while stirring for 1-2 minutes until the flour is well cooked. Remove the pan from the stove.

I immediately break all the eggs, beat them with a whisk and add them in portions to the dough. You can also add one egg at a time to the dough.

Let the dough cool until slightly warm. Add about 1/4 of the egg mixture (or 1 egg).

Beat the egg into the dough. Add the next egg only after the previous one is completely combined with the dough. Add all the eggs this way.

The finished dough is viscous, smooth, homogeneous, slowly flowing from the spatula. Transfer the dough into a piping bag.

On a baking sheet greased with a thin layer of vegetable oil, place the eclairs at a distance of 2 cm from each other. All my eclairs did not fit on one sheet. There were 35 eclairs in total, I made them small.

Bake the eclairs in an oven preheated to 180 degrees for about 30 minutes. It is better not to open the oven during baking so that the eclairs do not settle due to temperature changes. Prepare ingredients for fillings. I made 2 options.

For one filling, hard-boil an egg, cool in cold water, peel, and grate on a fine grater. Grind hard cheese in the same way. Wash the dill, dry it, chop it finely.

For other fillings, first defrost the shrimp and boil them in boiling salted water. I have unpeeled king prawns, I cooked them for 7 minutes. Remove the shrimp and let them cool.

Garlic, peel, wash, pass through a press or grate.

Peel the shrimp and chop finely. You can grind the shrimp in a blender, then the filling will be paste-like.

Combine shrimp, curd cheese, crushed garlic, mix. The mixture seemed a little thick to me, so I added a couple of tablespoons of cream.
