Wash the potatoes well and scrub thoroughly with a brush or stiff sponge under running water. Place the potatoes in their skins in a saucepan and cover with clean cold water. The water should completely cover the entire potato. Add salt immediately.

Place the pan on the fire. Bring the water to a boil and cook over medium heat for about 20 minutes. Check the readiness of root vegetables with a knife: if the knife easily pierces the vegetables, then the potatoes are ready. There is no need to pierce all the tubers in a row — just select the largest of all and check its readiness. If he is ready, then the rest are too.

Drain the water and leave the potatoes in the pan to cool. Peel the potatoes with a knife. If the tubers are large, cut them in half; leave small and medium ones whole. I fry the potatoes whole, but if you wish, you can cut the potatoes into slices: circles or quarters.
