Baked Vegetable & Cheese Macaroni Delight

Macaroni, cheese and herbed vegetables — delicious and beautiful. You can simply cook pasta and season it with oil, or you can diversify the usual cooking method. There are a great many such recipes. I especially liked the version of pasta with vegetables baked in the oven. Spicy herbs give vegetables a special taste and aroma. To prepare pasta with baked vegetables you will need: pasta, yellow and red bell peppers, eggplant, salt, vegetable and olive oils, Provençal herbs, basil, cheese, dill.

Wash the vegetables and dry them. Cut the peppers, remove the seeds, cut into medium cubes.

Remove the green part from the eggplant and cut it into cubes.

In a convenient container, combine vegetables, Provençal herbs, salt, basil, vegetable oil and mix.

Transfer the vegetable mixture to a baking dish and spread in an even layer. To ensure that the vegetables bake evenly, you can arrange them in one layer. If the form does not allow this, then during baking, stir the vegetables periodically, at the same time checking for readiness.

Bake vegetables in preheated to 180 degrees. oven until done, about 25 minutes.

While roasting vegetables, cook the pasta in salted boiling water until al dente, that is, slightly undercooked.
