How to make dumplings with mushrooms? Prepare the ingredients for the test. Dissolve salt in boiling water. Sift the flour into a deep bowl. Make a well in the center and pour salted boiling water and oil into it. Knead the dough first with a spoon. When the dough comes together, place it on the table and continue kneading with your hands for about 7 minutes. If necessary, add a little more flour. Place the finished dough in a plastic bag and leave to rest for about 30 minutes.

Prepare the necessary ingredients for the filling. Wash the champignons, dry and chop coarsely. The shape of the cuts is not important as they will be put through a meat grinder later. Place the chopped mushrooms in a heated frying pan, add a little vegetable oil and fry them over medium heat until the liquid has completely evaporated and is golden brown. If the liquid remains, the filling will subsequently become wet, and the dough will become soggy during modeling.

Peel the onion and cut into half rings. Place the onion in a preheated, clean frying pan, add a little vegetable oil and fry it until golden brown. Mushrooms and onions are fried separately. If you fry them together, then the onions do not caramelize, but are stewed in the juice that the champignons release. As a result, the mushrooms will simply be boiled and not as tasty.

Next, pass the fried onions and mushrooms through a meat grinder or chop using a food processor (food processor). I like the second option better. This way, in my opinion, it turns out much tastier. Add salt and pepper to taste and mix well. The filling for the dumplings is ready.

Roll out a piece of dough (leave the rest in the bag) into a thin layer approximately 2 mm thick. Using a special mold or glass, cut out circles from the dough. Place 1 teaspoon in the center of each circle. fillings.

Fold each circle in half, pinch around the perimeter and connect the ends together to form a dumpling. Form all other dumplings in the same way. If the dough has dried out, then its edges can be greased with water for better stickiness and only then glue the dumplings.

Place the already molded dumplings on a board sprinkled with flour. Place the board with dumplings in the freezer. When the dumplings are cooled and do not stick to each other, put them in a bag and store them in the freezer.

Cook the dumplings in salted water brought to a boil. After they float to the surface, cook them for just a couple of minutes, then place them on plates.
