Cut lard or pork fat into small cubes. To make lard easier to cut, put it in the freezer in advance and lightly freeze it.

Rinse the pork pulp (I used the neck part) and dry it with paper towels to remove excess moisture. Cut the pork into small portions of the same size.

Line the bottom and edges of a thick-bottomed pan or cast iron with finely chopped lard. A separate article at the link at the end of the recipe will help you choose a pan.

Next, make a middle layer with meat. Salt well.

Layer the pork again and add salt. Repeat several times until you run out of meat.

How long to cook stew in a saucepan? Place the pan over low heat, cover with a lid and leave for about 2 hours. Do not stir the pork while cooking, this is very important! Next, open the lid and use a spoon to lightly press down the meat so that the fat is on top of the pork pieces. After another hour of stewing, place a few bay leaves in the pan and cook for another 1.5-2 hours until the pieces of meat begin to fall apart when pressed.
