How to fry potatoes in sour cream in a frying pan? Very simple and quick, with a minimum of ingredients. To begin, prepare the necessary ingredients according to the list. You can use sour cream of any fat content. Oil — any vegetable oil for frying. I have sunflower.

Wash the potatoes, peel them and cut them into cubes no more than 1 cm thick. Place the potatoes in a colander and rinse them from excess starch, or another option — pour boiling water over them. Then dry thoroughly. In this way you will remove excess starch, which prevents the potatoes from browning.

Pour water into the sour cream and stir until smooth. This trick will prevent the sour cream from curdling too much.

Heat vegetable oil in a nonstick frying pan over medium heat. Lay out the potatoes. I have a basic recipe that only contains potatoes, sour cream and spices. However, in addition to these ingredients, you can add your own at this stage to taste. For example, an onion cut into half rings. Or mushrooms.

Fry for about 10 minutes, stirring occasionally, until most of the slices are golden brown. Determine the degree of friedness to your taste. I like it when the potatoes are all covered with a crust; others like, on the contrary, tender potatoes without a crust.

Reduce heat to low. Season the potatoes with salt, pepper, paprika and mix gently, being careful not to crush the slices. In addition to these spices, you can add your own to taste. There are good ready-made mixtures for fried potatoes, but they usually already contain salt and pepper, so there is no need to add additional salt and pepper to potatoes with such mixtures.

Pour the sour cream mixture into the pan and stir gently. Simmer everything together over low heat for about 10 minutes. If the potatoes are boiling strongly at the time of adding sour cream, the sour cream may curdle, so it is better to reduce the heat in advance.

Wash the greens, dry and finely chop. Choose greens to taste. I used parsley and dill, but you can use cilantro, basil, green onions or green wild garlic.
