Foil-Baked Coal Potatoes with Lard and Garlic

Beautiful, tasty and incredibly aromatic potatoes! When on a picnic or at the dacha, we always bake potatoes in foil over coals. And if you add a piece of lard and a little garlic to the potatoes, the aroma is such that no one can resist this dish, even those who are on a diet!

Basic:

Garlic 2 clove
Salt to taste
Potato 2 kg
Vegetable oil 2 tbsp
Salo 400 g
Allspice to taste

Since we will be baking potatoes in their skins, they need to be thoroughly washed with a sponge and dried with paper towels or napkins. It is best to take hard potatoes and approximately the same size so that they bake evenly.

You can use absolutely any lard to suit your taste, be it regular salted lard, smoked, or lightly salted lard with layers of meat. You need to cut it into equal slices, approximately 0.5 centimeters thick. You can leave the lard with the skin, or cook without it.

Pass the garlic through a press and mix with two tablespoons of oil, add salt to taste and allspice. To stir thoroughly. The amount of salt depends on how much salted lard you use. You can also omit garlic altogether.

Cut each potato in half, about 1 centimeter short of the edge. Insert a slice of lard into the cut.

Coat potatoes with garlic mixture.

Wrap each tuber in foil (do not waste foil, wrap it in 2 — 3 layers).

Light a fire, wait until the wood burns out and only good coals remain.

Carefully place the potatoes on the coals. Bake for about 6-10 minutes and then use tongs or a long stick to turn the potatoes over to the other side (be very careful not to burn yourself!). Bake again for about 6-10 minutes. You can check the readiness of the potatoes using a toothpick or knife.

Just as carefully, remove the finished potatoes. Leave to cool for 5-10 minutes. Carefully unwrap the foil and place the potatoes on a plate.
