Baked Eggplant, Veggies & Minced Beef Casserole

An appetizing, beautiful and very aromatic dish! Eggplant with vegetables and minced beef in the oven is a kind of casserole, similar in appearance to French ratatouille. But it is prepared with meat and a little differently. The result is a hearty meal for a family lunch or dinner.

Ingredients (8 portions)

Basic:

Garlic 3 clove
Tomatoes (It’s better to take chopped ones, in their own juice) 250 g
Salt to taste
Ground black pepper to taste
Bulb onions 1 pc
Minced meat 500 g
bell pepper 3 pc
Greenery (take any you like) to taste
Hot pepper 0.5 pc
Mint (dried) to taste
Eggplant (small, medium in size) 3 pc

How to cook eggplants with vegetables and minced beef in the oven? Measure out all ingredients. Wash the vegetables thoroughly and dry with paper towels. You can make the minced meat yourself or buy it ready-made. The recipe calls for beef, but you can use any other or mixed one. Remove the skins from the tomatoes by pouring boiling water over them.

Cut the washed eggplants into even slices 1 cm thick or a little more. Place them in a suitable container, add salt, mix and leave for half an hour. During this time, the eggplants will release bitter juice, which will need to be drained. Then rinse the vegetables with water and dry.

Chop the onion finely. Divide the resulting mass into two equal parts.

Combine one part of the onion with minced meat, salt and black pepper. Stir.

Set aside the second part with finely chopped chili peppers and diced bell peppers. The sauce for our dish will be prepared from these vegetables.

Heat vegetable oil in a frying pan. And sauté the onion.

Add bell pepper and hot chili pepper to the onion. Fry for another 5-7 minutes, stirring.

Add chopped tomatoes and mint to the frying. Continue simmering for another 5-7 minutes.

At the end of preparing the sauce, add finely chopped herbs, salt and ground black pepper to taste. Stir.

Spread half of the tomato sauce into the bottom of a wide frying pan or baking dish.

Place the eggplant mugs on top of the sauce, alternately with the minced meat. That is, add minced meat between the eggplants.

Pour the second half of the sauce over everything. Pour in a little water if necessary. And bake in the oven at a temperature of 180-190 degrees for 40-45 minutes. Determine the exact time using your oven!

Remove the finished dish from the oven. Sprinkle with a small amount of chopped herbs and garlic slices. Cover with a lid and let rest for about half an hour to allow the dish to absorb the aromas of herbs and garlic. Serve Turkish eggplants with minced meat both as a separate dish and with a side dish — for example, with noodles. Bon appetit!
