Ingredients (3 portions)

Basic:

Onion 2 pc
Garlic 10 clove
Tomatoes (or 1 can of tomatoes in their own juice) 5 pc
Salt to taste
Bay leaf 2 pc
Zucchini 1 pc
Carrot 2 pc
Vegetable oil 30 ml
Dry spices to taste
Peppercorns to taste
bell pepper 2 pc
Boar meat (boar ribs) 1 kg

How to bake wild boar ribs with vegetables in the oven? Very simple! Prepare all the ingredients you will need for the recipe. The set of vegetables can be absolutely anything you want. Eggplant, broccoli, cauliflower, green beans and much more are great. If you have frozen meat, you should first defrost it. How to do this correctly, read the article at the end of the recipe. Turn on the oven at 180-200 degrees.

Peel the vegetables and rinse under running water. Dry with paper towels to remove excess water.

Line the baking dish with baking paper if necessary. Place the first layer of tomatoes, cut into slices or large cubes. I used 1 can of tomatoes in their own juice for the recipe.

Next, distribute the bell peppers and zucchini, cut into small pieces, evenly.

Make the next layer of onions and carrots, chopped randomly and not very finely. Place the garlic cloves, add a couple of bay leaves and sprinkle everything with your favorite spices. Lightly salt everything.

Rub the boar ribs with olive or vegetable oil. Sprinkle with ground pepper, salt, garlic powder, thyme, rosemary and massage well so that the spices are evenly distributed throughout the piece. Please note that you can use any spices to suit your taste. Place ribs on top of vegetables in baking dish.

Cover the pan with a lid or foil and place in a preheated oven. Bake at 180-200 degrees for 30 minutes.

After the specified time, carefully turn the piece of wild boar over to the other side. Check if there is not enough liquid from the vegetables, then pour in a little boiling water (70-100 ml will be enough). Cover with a lid and bake for another 30 minutes.

Next, turn the piece of meat over again, remove the lid and bake the dish until fully cooked and golden brown. It took me about 30-40 more minutes. The cooking time and temperature depend on the data of your oven (read about this at the end of the recipe) and on how young the animal was.
