Ingredients (4 portions)

Basic:

Salt to taste
Ground black pepper to taste
Sour cream 3 tbsp
Hard cheese 50 g
Zucchini 1 pc
Pork 500 g
Mayonnaise 1 tbsp
Eggplant (large or 2 small) 1 pc

How to make pork with eggplant in the oven? Prepare the ingredients.

Wash the pork, dry it and cut into thin slices. You can use already chopped schnitzels. My schnitzels were thick, so I additionally beat them with a hammer on both sides.

Cut the zucchini into slices.

Cut the eggplant into slices too.

Combine sour cream with mayonnaise and mix.

Place pork in a greased baking dish. Season with salt and pepper. Brush with sauce.

Place the zucchini on the meat. Lightly brush the top with sour cream and mayonnaise sauce.

Place the eggplant slices on top of the zucchini and brush with the remaining mayonnaise.

Place the pan in an oven preheated to 180°C for 40 minutes. Grate the cheese and sprinkle it over the casserole. Bake for another 10 minutes until the cheese is golden brown.
