Basic:

Garlic (1 head) 40 g
Salt to taste
Ground black pepper to taste
Butter 40 g
Vegetable oil 2 tbsp
Pumpkin 500 g
Turkey fillet 500 g
Herbal mixture (1/2 tsp. provencal herbs) g
Thyme, thyme (optional) to taste

How to bake turkey with pumpkin in the oven? Prepare the necessary ingredients for the dish. You can use any turkey meat: fillet from the birdʼs breast or thigh. I had small breast fillet. Cut the cold butter into small cubes. If your kitchen is warm, keep the butter in the refrigerator until itʼs needed to prevent it from melting.

Peel and seed the pumpkin and cut into medium pieces. You can use any type of pumpkin.

Separate the head of garlic into individual cloves. Peel each clove.

Rinse the turkey fillet thoroughly and dry it. Cut the meat into medium pieces.

Heat vegetable oil in a frying pan and add turkey. Fry the fillet pieces over high heat, stirring occasionally, until golden brown. You need to fry over high heat, this will seal the juices inside the meat. If the heat is lower, the meat, on the contrary, will begin to release juice and thus frying will turn into stewing. If the oil starts to shoot, cover the pan with a lid.

Place pumpkin pieces in a baking dish. There is no need to lubricate the mold with anything. Lightly salt and pepper the pumpkin and place pieces of cold butter on top. If the pumpkin is dense and hard, then place the mold in an oven preheated to 180°C for 20 minutes. My pumpkin was young, so I didn’t pre-bake it, otherwise it would have completely boiled and turned into puree.

Spread the roasted turkey over the squash. Place garlic cloves on turkey.

Salt, pepper, and sprinkle with Provençal herbs. If desired, you can place sprigs of fresh thyme on top. Place the turkey and pumpkin in a preheated oven at 180°C and bake for about 30 minutes. If you wish, you can cover the pan with foil, this will make the dish a little juicier.

If you added fresh thyme sprigs, remove them from the pan. They have already given their flavor to the dish. Place the finished turkey and pumpkin on plates and serve. Bon appetit!
