Basic:

Salt to taste
Ground black pepper to taste
Dry spices to taste
Paprika 1 tsp
Turkey fillet 1 kg

Marinade:

Garlic 6 clove
Honey 1 tbsp
Mustard 1 tbsp
Sour cream 2 tbsp
Grainy mustard 1 tbsp

How to bake turkey fillet in the oven? Prepare the necessary ingredients. It is advisable to use large breast fillets in one piece, preferably chilled. When using a pre-made turkey spice mix, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish.

Rinse the turkey fillet and pat dry with paper towels. Rub the meat on all sides with poultry spices, paprika, salt and pepper. Leave to marinate for 20 minutes. If you wish, you can make deep punctures with a knife over the entire area of the meat.

Now prepare everything for the marinade. It is better to use sour cream with a fat content of 20-25% so that the marinade is not very liquid and does not drip off the fillet. Honey for the marinade needs to be liquid; it combines more easily with all the ingredients. If your honey is candied, melt it in the microwave or in a water bath and cool at room temperature.

In a bowl, mix sour cream, honey, Russian and French mustard and pressed garlic. Mix everything well. You can replace fresh garlic with 1-2 tsp. dry garlic powder.

Place the meat in a bowl, pour in the marinade and thoroughly spread the sour cream and mustard mixture all over the meat.

Cover the bowl with cling film and marinate in the refrigerator for 2-3 hours, or preferably overnight.

Place the fillet in a baking dish and coat the top with marinade.

Cover the pan with foil and place in an oven preheated to 180°C for 45-50 minutes.

Then remove the foil, brush with any remaining marinade, if any, and return the meat to the oven for about another 30 minutes until a golden brown crust appears on the surface. The exact baking time depends on your oven.
