How to bake a whole stuffed goose with apples in the oven with a crispy crust? To begin, prepare the products according to the list. I have a goose weighing about 3 kg, but you can take another — choose according to the size of your oven or baking dish. Apples are suitable for any color and sweetness, both sweet and sour are good. Semi-sweet and juicy ones would be ideal.

Inspect the goose for any remaining feathers and remove them if necessary. Cut off the fender liners. When baked, they can burn, which is why the dish loses its appearance (and this is important, because it’s a holiday for us).

Thoroughly clean the coccygeal gland, trim off excess fat from the abdomen. Wash the goose and dry it with paper towels; there should be no water on it. Mix all the dry spices together.

Rub the goose carcass with dry spices inside and out. Leave the goose at room temperature for one hour. Please note that I do not use salt; soy sauce replaces it in this recipe. If for some reason you don’t like it, then after the bird has been sitting, rub it with salt.

Prepare the marinade. To do this, mix honey, olive oil, and soy sauce in a separate bowl. Spread the carcass outside and inside, leave it for 15 minutes. Repeat lubrication again. Wrap the goose in cling film and leave it in the refrigerator for 12 hours. It is best to leave it overnight and begin full cooking the next day.

Remove the cling film from the goose. Seal the cut in the neck area with toothpicks to prevent juices from escaping during baking.

Wash and dry the apples. I don’t remove the skin from them; it gives off its flavor to the meat. In addition, with it the fruits retain their shape and do not fall apart. Cut apples (2-3 pieces) into 4 parts, core them. Place the fruit in the belly. You can use more or fewer apples depending on their size and the weight of the goose.

Pinch the cut on the abdomen with toothpicks. Tie the gooseʼs legs with strong twine. Preheat the oven to 210-220 degrees.

Re-brush the goose with marinade and place it in a spacious goose pan, belly up. Bake the goose in a hot oven for about 40 minutes until browned. Determine the exact baking time and temperature based on your oven.

Cut the remaining apples in half and cover the goose with them. Cover the casserole dish with a lid and continue baking for about 2 hours. Check readiness by piercing the thickest part. The released juice should be clear. Leave the finished goose with the oven turned off for 15 minutes. Transfer the goose with apples to a plate, remove the toothpicks and garnish with chopped bell pepper, fresh herbs and lemon wedges.
