Ingredients (8 portions)

Basic:

Garlic 4 clove
Salt to taste
Ground black pepper to taste
Cilantro, coriander 1 tsp
Rice 1 cup
Bay leaf 2 pc
Bulb onions 2 pc
Paprika 1 tsp
Mayonnaise (You can use any mayonnaise.) 3 tbsp
Soy sauce 3 tbsp
Green cilantro to taste
Duck (You can prepare a dish using wild duck.) 1500 g

Prepare all the necessary ingredients for the recipe. Tar the duck, it’s great if you have a blowtorch, carefully scrape the skin with a knife and rinse well with hot water. Remove the innards and rinse again. Seasoning can be adjusted to your taste. Coriander can be replaced with cumin seeds.

Finely chop the cilantro seeds. You can use a coffee grinder.

Peel the onion and cut into 4 — 6 pieces.

Take a cauldron, pour water, add ground cilantro, onion, bay leaf, salt to taste, put in the prepared duck carcass and add 2 — 3 tbsp. soy sauce. You need to cook for an hour and a half. Depending on the age of the bird. If the duck is large, pierce it with a thick needle in thick muscle areas.

While the duck is boiling, take long grain rice, rinse well and cook in a small amount of salted water until half cooked.

Chop a few cloves of garlic very finely.

Place the cooked and cooled rice in a bowl, add cilantro, garlic and ground black allspice.

Remove the boiled duck from the broth, rinse with warm water and stuff with cooked rice. It is advisable to stitch the carcass with ordinary thread.

Take any suitable form, grease with vegetable oil, put the stuffed duck in it and generously grease with any mayonnaise, it will not allow the skin to dry out, it will remain tender and juicy. Sprinkle paprika on top.

Place the remaining rice in the empty spaces of the pan. You can apply a mayonnaise mesh over the rice.

You need to bake in an oven preheated to 180°C — 200°C for about 40 minutes. The duck meat will be well saturated with the aromas of the filling and will acquire a golden color. Remove the pan from the oven, let it cool slightly and divide the meat into pieces of the shape you require, after removing the threads.

Remove the baked rice from the pan onto a plate and place the pieces of meat on top of it.
