Stuffed Zucchini Boats with Minced Meat and Mushrooms

A delicious festive second meal with an original design! These zucchini boats in the oven with minced meat and mushrooms are great to cook when you want to pleasantly surprise your guests. Not only are they very tasty, but they also look beautiful on the table. You make one dish, but get two in one: meat with a side dish!

Basic:

Onion 1 pc
Salt to taste
Pepper to taste
Hard cheese 100 g
Minced meat 300 g
Mushrooms (I have champignons) 200 g
cucumbers (to decorate the dish) 1 pc
Zucchini (approximately 1 kg) 3 pc

How to make zucchini boats? Prepare your ingredients. I used fresh mushrooms, but you can also use frozen ones. Please note that the frying time will increase slightly, as they will give a lot of excess moisture that will need to be evaporated.

Wash the zucchini (I used zucchini) and wipe dry. Cut in half. Using a knife, make cuts inside, not reaching the skin. Use a spoon to scoop out the pulp and set aside. We will add it to the minced meat later, finely chopping it. And the zucchini themselves will be the basis for our boats.

Clean the mushrooms from debris, wash and finely chop. Peel the onion and finely chop it too. Heat a frying pan on the stove. Pour vegetable oil into it. Fry the onions and mushrooms in a frying pan in oil until tender, stirring occasionally. Grate hard or semi-hard cheese on a coarse grater.

Add fried mushrooms with onions, chopped zucchini pulp and 2/3 of grated cheese to the prepared minced meat (I have a mixture of chicken and pork). Mix everything. Add salt and pepper to taste. Turn on the oven at 190 degrees to warm up.

Line an oven tray or baking tray with baking paper. Arrange the prepared zucchini “boats”. Fill them evenly with minced meat. Sprinkle the remaining grated cheese on top. Place the baking sheet in the preheated oven for approximately 40 minutes. Determine the baking time and temperature based on your oven.

"Boats" need sails. Letʼs make them from fresh cucumber. Wash it first and cut off the edges. Thinly slice into rectangular slices. This can be done either with a very sharp regular knife or with a special paring knife. Use a toothpick to shape the cucumbers into a sail.

Insert toothpicks with a cucumber sail into the ready-made hot zucchini boats and serve immediately. Bon appetit!
