Ingredients (6 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Salt (no slide, shallow) 2 tsp
Sugar (no slide) 1 tsp
Apples 1 pc
Rice 0.5 cup
Carrot 1 pc
Vegetable oil 2 tbsp
Dry rosemary to taste
Soy sauce 2 tbsp
Ground red pepper to taste
Allspice 1 tsp
Duck (small, approximately 1700-2000 gr.) 1 pc

How to bake duck with rice in the oven? Prepare the necessary ingredients. You can use balsamic sauce instead of sugar. It is made with balsamic vinegar. It has a viscous consistency, a fruity aroma and a sweet-sour taste. It is better to use long-grain rice so that you don’t end up with porridge.

First, prepare the sauce for marinating the duck. Mix soy sauce, sugar (balsamic sauce), 1 teaspoon salt and allspice in a small container. Pass the garlic through a press and add it to all the ingredients. Mix everything thoroughly.

Wash the duck, remove the sebaceous glands from the tail if desired. Dry the carcass with paper towels, and then coat the duck on all sides with the prepared sauce. Also coat the inside of the carcass well. Leave the duck to marinate while you prepare the filling. Turn on the oven at 190 degrees in advance.

Rinse the rice several times in running water. Place the rice in a saucepan, add water and place over high heat. After boiling, reduce the heat to medium and cook for about 5-7 minutes until the rice is half cooked. While the rice is cooking, fry it.

Wash and peel the onions and carrots. Finely chop the onion and grate the carrots on a medium grater. Heat vegetable oil in a frying pan. Fry the vegetables for a few minutes, stirring constantly. Place the half-cooked rice in a colander and rinse again with water. Mix rice and fried vegetables in a separate bowl. Season with salt and pepper and sprinkle with dry oregano if desired.

Wash the apple and cut into medium pieces.

Stuff the duck with rice and vegetables, leaving some space for the apples.

At the end, stuff the carcass with apples.

Sew up the belly with threads or cover with toothpicks. Tie the wings and legs with a thick thread, as in the photo. This way the finished dish will look neat and beautiful.

Wrap the stuffed duck in foil, place in a baking dish and place in the oven for about 1 hour at 180-190 degrees, top-bottom mode. After the specified time has passed, remove the pan from the oven, cut the foil on top and send the duck to bake again for 1-1.5 hours. The exact time depends on the features of your oven. 15-20 minutes before cooking, change the oven mode to convection to form a golden brown crust.

During baking, periodically open the oven and pour the resulting juice and fat over the duck using a spoon. It is also convenient to coat the duck with a silicone brush (be careful not to burn yourself!). Carefully cut the finished duck along the breast, pour the remaining fat from baking over the rice, and serve. Bon appetit!
