Oven-Baked Pork Chops in Spiced Batter

Another recipe for pork in batter. This time in the oven. Iʼm specifically hooked on chops. Last time I made it with pork, but with cheese and fried. This time, instead of cheese, I added more spices and chopped herbs to the batter. And for a change I decided to bake it in the oven. True, when you cook dishes in batter, frying is still necessary, otherwise all the batter will drain from the meat during baking and you won’t get a fluffy crust. The frying time is simply reduced to 1-2 minutes on each side. The meat will not have time to fry yet, but the batter will already form a crust around the pork.

Ingredients (4 portions)

Basic:

Salt to taste
Ground black pepper to taste
Butter 1 tbsp
Vegetable oil 2 tbsp
Pork 400 g
Paprika 0.5 tsp

Batter:

Wheat flour 30 g
Milk 30 ml
Eggs 1 pc
Dill 10 g
Turmeric 0.5 tsp

Prepare the ingredients. To cook pork in batter in the oven we will need: pork pulp (you can use a whole piece and then it needs to be cut into portions not very thick slices, I had ready-made pork schnitzels), vegetable and butter for frying, paprika, ground black pepper and salt.

Cut the pork into portions. Beat the meat with a hammer on both sides. Sprinkle chops with paprika, pepper and salt. There is no need to add a lot of salt and pepper, as the batter will also contain spices.

Batter. To prepare the batter we will need: a large egg, milk, flour, dill, turmeric, ground black pepper and salt.

Wash the dill, dry and finely chop.

Combine egg, milk, dill, turmeric, salt and pepper in a bowl. Mix everything thoroughly until smooth.

Add flour and mix again.

You should get a semi-viscous mixture without lumps.

In a frying pan, heat the butter along with the vegetable oil.

Dip the chops in the batter.

Fry on both sides until a light golden crust appears for 1-2 minutes.

Transfer chops to a foil-lined baking sheet.

You can pour the rest of the batter on top of the chops so it doesn’t go to waste. Bake in an oven preheated to 180°C for about 25 minutes. Serve the pork hot with any side dish. Bon appetit!
