Vegetable oil 2 tbsp
Frozen berries (I have cranberries) 250 g
Pork neck 1.5 kg

How to bake pork neck in the oven? Prepare all the necessary ingredients. You can use any frozen berries: black currants, cherries, lingonberries, cranberries, or not add them at all. But I strongly recommend using berries: together with honey they create a wonderful tandem and perfectly complement the taste of meat. You can replace the red onion with a regular onion, but red onion is still preferable — it is more aromatic and less pungent.

Rinse the pork neck thoroughly and pat dry with paper towels. Make deep transverse cuts on the pork with a knife, not reaching 2 cm from the bottom. Season the pork outside and in the cuts with salt and pepper.

Peel the onion and cut into half rings. At the same time, try to ensure that the half rings do not break up into separate segments, because you need to insert them whole into the meat.

Place frozen berries (mine are cranberries) in a blender bowl. Add honey and 1 tbsp. l. vegetable oil.

Beat everything until smooth puree. The puree will be very cold and viscous, so it is very convenient to spread on meat. To keep the mixture cold, it is better to beat the berries at the very end, just before spreading on the meat.

Place the meat in a baking dish. Rub it with the berry mixture on the outside and in the cuts.

Insert onion half rings into the cuts on the pork. Pour the remaining vegetable oil over the top of the meat.

Cover the pan with foil, being careful not to let the foil touch the meat, otherwise the berries and onions will stick to it. Place the pork neck in an oven preheated to 190°C for 1 hour. During this time, the piece of pork should be well baked inside.

Then remove the foil and pour the juice from the bottom of the pan over the neck. Return the meat to the oven and bake for about 30 minutes at 180°C. The exact baking time depends on the features of your oven. The top of the neck should be browned.
