How to make minced pork cutlets? Prepare your food. Choose meat with layers of fat; the cutlets will turn out juicier. To make it easier to cut the meat, freeze it a little in the freezer if it is fresh, or do not defrost it completely if it is frozen. Cut the meat into very small pieces.

Place the finely chopped meat in a bowl. Add an egg to it. Peel the onion and cut into small cubes. Better yet, grate it — this will give the cutlets extra juiciness. You can also add grated garlic.

Then add some mayonnaise. Thanks to mayonnaise, the cutlets will turn out juicier and more tender. Instead of mayonnaise, you can use kefir or sour cream. To hold the cutlet mass together, add starch to the minced meat. Or flour if there is no starch. Add some chopped herbs to taste. You can use green onions as greens. Wash and dry the greens first.

Salt the minced meat a little (do not forget about the presence of mayonnaise, which already contains salt) and add spices to taste. Mix the whole mass well until smooth.

Heat a frying pan over high heat and pour a little vegetable oil on it. The minced meat for the cutlets turns out to be very soft and juicy, so you won’t be able to make cutlets from it. Place it in the pan using a spoon, forming small cutlets, not very thick, so that they have time to fry. Fry them on both sides over low heat until golden brown.

The cutlets should be well cooked. So turn them over several times. At the very end, it is better to cover the frying pan with a lid and keep the cutlets for 5 minutes on the lowest heat.
