Pollock fillet 450 g
Milk 30 ml
White bread 35 g
Eggs 1 pc
Garlic 1 clove
Butter 2 tbsp

How to make fish cutlets from pollock in the oven? Prepare all the necessary ingredients. Cutlets can be prepared from either fresh or frozen fish fillets. In this case, you will need to first defrost the fish in the refrigerator and squeeze out excess water from it. If you take frozen fish, then keep in mind that when you defrost the fish directly, you will have less fish left. Therefore, take fish with a reserve. Ready minced pollock fish is also suitable.

Cut the crusts off the slices of white bread. Pour milk over the bread and leave for 10 minutes. It is better to take bread that is not completely soft, but yesterday’s bread. If your bread is completely dry, it’s okay, it will also work, and the milk will soften it.

Wash the pollock fillet, dry it and remove small bones.

Place the fillet in a blender bowl and blend until smooth.

Place the resulting minced fish in a bowl. Squeeze the bread and place it in the minced meat. Also add the egg, melted butter, salt and pepper. Add a garlic clove passed through a press.

Knead the minced meat thoroughly with your hands. If the minced meat turns out watery, add 1-2 tbsp. l. semolina and leave for 20 minutes to swell. Place the finished minced meat in the refrigerator for 20 minutes.

Place semolina or breadcrumbs on a flat plate. Form medium-sized round cutlets from the chilled minced meat and roll them in breading on all sides. In the video for this recipe, I show how you can quickly and easily form smooth, beautiful cutlets using a cooking ring.

Place the cutlets on a parchment-lined baking sheet. Place the fish cutlets in an oven preheated to 180°C for 30-35 minutes. The exact baking time depends on the features of your oven, so use it as a guide. If the oven has a convection mode, it is better to turn it on. Then the cutlets will be baked equally on top and bottom. Perhaps they will bake even faster. But it is important to check that they do not dry out.
