Recipe instructions

Step 1

Step 1
How to make juicy turkey cutlets with zucchini? Very simple! Start by preparing the necessary products according to the list. You can use turkey meat from the breast or thigh. You can replace turkey with chicken. You can use any vegetable oil suitable for frying. The butter should be at room temperature, so remove it from the refrigerator in advance.

Step 2

Step 2
Wash the turkey fillet, dry it and cut into small pieces. I used tender breast fillet.

Step 3

Step 3
Pass the fillet through a meat grinder or grind in a blender. To reduce cooking time, you can use store-bought minced meat.

Step 4

Step 4
Wash the zucchini and scrub with a brush. Grate on a fine grater along with the peel. Lightly salt the zucchini and leave for 15 minutes to release its juice. Then drain the released juice and lightly squeeze the zucchini.

Step 5

Step 5
Peel the onion and cut into very small cubes. So that the onion is not felt at all in the cutlets, you can pass it through a meat grinder along with the minced meat. True, in this case the onion will release a lot of moisture, and the minced meat may have to be slightly thickened with flour or semolina. If your child doesnʼt like onions, you can skip adding them to the cutlets altogether.

Step 6

Step 6
Wash the parsley, shake off moisture and finely chop. If you wish, you can replace or supplement with other herbs, for example, dill, cilantro, green onions, or use a mixture of different herbs.

Step 7

Step 7
In a bowl, combine minced meat, onion and parsley. Add breadcrumbs and soft butter. Season the mixture with salt, pepper and knead thoroughly. An egg is not needed in this recipe, as the turkey fillet is tender and the zucchini is quite juicy.

Step 8

Step 8
Add grated zucchini to the minced meat and mix thoroughly again.

Step 9

Step 9
Form the resulting minced meat into even round cutlets. From this amount of minced meat I got 8 cutlets.

Step 10

Step 10
Heat vegetable oil in a frying pan over medium heat and fry the cutlets on both sides until golden brown.

Step 11

Step 11
Transfer the finished cutlets to a plate and serve. Bon appetit!
