Peel the top unpresentable leaves from the white cabbage forks and cut out the stalk. Cut the cabbage into pieces and pass them through a meat grinder or chop them using a blender. Add minced cabbage, onions, and spices to the minced meat; I used salt and ground black pepper. Mix the mixture thoroughly.

Also beat a chicken egg into the bowl; it is needed to “hold” the minced meat together so that the cutlets do not fall apart during frying. Wash the egg with baking soda first, as there may be harmful bacteria on its surface. Mix the minced meat until the mixture has a homogeneous consistency.
