Quick & Tasty Vegetarian Chickpea Cutlets

Simple and satisfying, for an awesome homemade dinner! Vegetarian chickpea cutlets are another representative of the Lenten menu. They are prepared very quickly and simply, provided that the legumes are boiled in advance. Try it and you will like it!

Ingredients (6 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Salt to taste
Wheat flour (with a slide) 2 tbsp
Pepper to taste
Breadcrumbs 4 tbsp
Carrot 1 pc
Vegetable oil 20 ml
Dry spices to taste
Chickpeas 1 cup

How to make vegetarian chickpea cutlets? Prepare the necessary ingredients. My vegetables are medium sized. You can use any spices to suit your taste.

Measure out the specified amount of chickpeas, place them in a bowl, cover with water and leave overnight. In 6-8 hours, the chickpeas will swell and increase in size. The water must then be drained.

Rinse the chickpeas in water and place in a saucepan, add a new clean portion of water, cook for 1-1.5 hours. Let the finished chickpeas cool and drain the water. Don’t throw away the chickpea broth, it will come in handy later.

Wash the carrots thoroughly in running water, peel, rinse and grate on a coarse grater. Peel the onion and cut into cubes. Heat the vegetable oil in a frying pan and fry the onions and carrots over medium heat until soft. How to choose a frying pan and oil for frying, read the articles at the end of this recipe.

In a deep bowl, mix the prepared chickpeas, fried carrots and onions, pressed garlic, pour in about 100 ml of chickpea broth. Puree everything together with a blender or pass through a meat grinder. I used a blender.

Transfer the minced chickpeas to a bowl. Add spices to taste, including salt and pepper. Add flour to the chickpeas so that the cutlets form easily. Stir.

Form chickpea cutlets from the prepared mixture. If the cutlets fall apart, add a little more chickpea broth to the minced meat and stir. Choose the shape and size of the cutlets as desired. Roll each cutlet in breadcrumbs or a mixture (I use a mixture of breadcrumbs, bran and flour).

Fry lean chickpea cutlets on both sides until golden brown in oil in a frying pan over medium heat. Serve the finished cutlets with a side dish. As a side dish you can offer mashed potatoes, pasta and fresh vegetables. Bon appetit!
