How to fry beef liver cutlets? Prepare the necessary ingredients. I used mayonnaise with a fat content of 67%. Instead, you can use full-fat sour cream or cream in the same amount. This will make the cutlets juicier. Pour boiling water over the liver and remove the film from it by prying it with a sharp knife with a thin blade. Then cut it into large pieces, rinse and place in a colander to drain.

Peel the onion and cut into four parts. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water. Peel the garlic as well.

Place onion, garlic and liver in a blender bowl. I first put in half the prepared onions and half the liver to make it easier to grind. You can add all the garlic at once. It is better to place the onions and garlic on the bottom so that they grind better.

Grind all ingredients into a paste. Then do the same with the remaining onions and liver. You can put all the ingredients in a deep bowl and grind with an immersion blender. It is noticed that in this case the minced meat will be thicker in consistency. If you don’t have a blender, you can use meat chopping.

Beat the egg, add mayonnaise, add flour sifted through a small strainer, add salt and pepper to taste.

Mix everything thoroughly so that there are no flour lumps. You can let the minced meat sit for a while, about 10 minutes, and then mix it well again. Then there will definitely be no lumps left, since the flour will swell and mix well into the total mass.

Heat two tablespoons of vegetable oil in a frying pan. Do not pour too much oil so that the cutlets do not turn out greasy. Place a small amount of minced meat into the pan, forming round or oval cakes. I used a wooden spoon to spoon out the same amount of minced meat so that the cutlets came out the same size. Fry on one side over medium heat for about 3 minutes.
