Basic:

Tomatoes (optional) 1 pc

Water 100 ml
Potato 500 g
Tomato paste 2 tbsp
Vegetable oil 2 tbsp
Salted cucumbers 200 g
Brine (cucumber) 50 ml
Turkey fillet 500 g

How to cook turkey basics? Prepare everything you need. You can use any turkey meat: thigh or breast fillet. In addition to tomato paste, you can add 1 fresh tomato. You need to remove the skin from it by making a cross-shaped cut on the peel and lowering it into boiling water for 10-15 seconds. After this manipulation, easily remove the loose skin, and either cut the pulp into cubes or grate it on a fine grater to a puree.

Wash the turkey fillet, dry it and cut into cubes. One of the distinguishing features of azu from other similar dishes is the cutting of all ingredients into cubes. The sticks of meat, potatoes and cucumbers should be approximately the same size.

Peel the potatoes and also cut into cubes. For this dish, use potatoes that donʼt have a lot of starch. Because starchy varieties will quickly boil during stewing, and we need the potatoes to retain their shape. Potatoes with yellowish flesh are suitable for this. The whiter the pulp, the more starch it contains.

Cut the pickled cucumbers into cubes. Cucumbers should be firm and crispy. If you don’t have pickled cucumbers on hand, you can replace them with pickled ones.

Heat vegetable oil in a deep frying pan over high heat. Place the turkey and fry the fillet on it, stirring occasionally, until golden brown. Frying over high heat will quickly seal in all the juices in the meat and prevent it from drying out.

Add tomato paste (and fresh tomato, if you decide to use it) to the pan. Simmer with the bird, stirring, for about 5 minutes.

Add chopped cucumbers and potatoes. Mix everything.

Salt and pepper. Pour hot water and cucumber pickle into the pan. Mix everything carefully again.

Cover the pan with a lid and simmer over low heat for about 20 minutes until the meat and vegetables are cooked through.
