Basic:

Garlic 2 clove
Olive oil 4 tbsp
Salt to taste
Beef (steaks 2 pcs.) 600 g
Peppercorns (1 tsp) to taste
Rosemary (dry or 1 sprig fresh) to taste
Thyme, thyme (2-4 branches) to taste

How to fry meat on coals with aromatic herbs and garlic? Prepare all the products indicated in the recipe. It is better to use fresh herbs, but you can also use dry ones. The amount of garlic, pepper and other ingredients may vary slightly depending on your taste preferences. Remove the meat from the refrigerator and leave at room temperature for a while.

Peel the garlic, rinse and chop as finely as possible. Wash and dry the herbs. In the recipe I used a few sprigs of fresh thyme and one teaspoon of dried rosemary. Place garlic, thyme leaves and rosemary in a small deep bowl.

Pour in olive or odorless vegetable oil.

Grind the peppercorns in a mortar. You can use ready-made coarse ground pepper. But hand-chopped peas are many times more flavorful than ground store-bought pepper.

Add the pepper to the garlic and herbs and mix everything thoroughly. Set two incomplete teaspoons of marinade aside, they will be useful later.

Distribute the remaining garlic marinade evenly over the meat pieces.

Rub the spices and oil over the entire surface of the beef using massaging movements. Cover with cling film and leave to marinate for about an hour.

Light up the grill. When the fire burns down and the coals remain, proceed to the next step of cooking. Place steaks on a dry, preheated grill. Remove any pieces of garlic from the beef first, otherwise they may burn. Fry over high heat until a delicious golden crust appears.

Turn the meat over and leave until the other side is browned.

Wrap the finished steaks in foil and leave to rest for about 10 minutes.

Place the steaks on a plate and season each piece with salt to taste. Spread the previously set aside garlic dressing over the pieces of meat.
