How to make pork neck steak in a frying pan so that it turns out juicy, tasty and aromatic? Prepare the necessary ingredients according to the list. It is better to take fresh meat from a trusted manufacturer. Vegetable oil can be olive or sunflower depending on preference. With sunflower, the taste of the top crust on the meat will be more tender, with olive — with a slight characteristic bitterness. In addition to these spices, you can use your own to taste.

The pork neck must be taken out of the refrigerator in advance and allowed to lie in the room for at least 1 hour so that the meat inside is at the same temperature. Then wash the pork and dry it with paper towels. It is necessary to dry the meat, otherwise it will not be fried, but stewed in meat juice. Cut the piece across the grain into steaks about 3cm thick each. I got 2 steaks.

Brush the steaks with vegetable oil and sprinkle with salt and pepper.

Heat a thick-bottomed frying pan over high heat. Place the steaks and fry for 3-4 minutes on one side. If you have a grill pan, it is better to cook on it — you will also get a beautiful pattern on the meat.

When the meat has a golden brown crust and a clear pattern from the pan, turn the steak over to the other side. Reduce the heat slightly and fry the meat for another 5-7 minutes, turning occasionally. To check readiness, pierce the meat with a knife: if the juice is clear, then the steaks are ready. My meat is medium rare. If you are completely confident in the quality of the chosen meat, then you can cook it as well. If desired, cook the meat until fully cooked.

At the end of frying, remove the pan from the heat, cover with a lid and leave the meat for 10-15 minutes so that all the juices are evenly distributed over the steaks.
