For cupcakes::

Sugar 170 g
Wheat flour 170 g
Butter 60 g
Milk 120 g
Vanillin to taste
Eggs 2 pc
Soda 0.2 tsp

For cream::

Powdered sugar 2 tbsp
Heavy cream 250 g
Food coloring 1 g

How to make sponge cakes in silicone molds? Prepare the necessary ingredients for this. I use category C1 eggs. You can take milk of any fat content.

Combine milk and butter in a saucepan, place on heat and bring to a boil. Sift the flour through a sieve to fill it with oxygen. Sifting will make the finished muffins fluffier. Combine the sifted flour with soda and vanilla.

Combine the eggs with sugar and beat the mixer at maximum power for several minutes until they turn into a fluffy white mass.

Alternately add the flour and milk mixture to the beaten eggs. Using a whisk, mix the dough by hand. You may need more or less flour, take this into account and focus on the consistency of the dough. It should not be too thick, it will look like moderately liquid sour cream

The dough should not lose its fluffiness from beaten eggs.

To bake cupcakes, prepare silicone molds and paper capsules. Insert paper capsules into silicone molds.

Fill the molds with dough, not reaching the top. Approximately 2/3 of the volume of a paper capsule. Place in the oven, preheated to 180 degrees, for 20-35 minutes. When baking, use your oven as a guide.

The cupcakes will turn golden brown. Remove the finished cupcakes from the silicone mold and leave to cool, placing them on their sides. If desired, you can remove some of the core from the muffins and fill them with a delicious filling.

To prepare the cream, combine heavy cream with powdered sugar and beat into a fluffy, stable cream. The finished cream can be colored with food coloring in any color.

Using a pastry bag, pipe the cream onto the cupcakes, forming a cap. You can decorate the cupcakes with melted chocolate, any berries, nuts or sugar sprinkles.
