Basic:

Wheat flour 240 g
Sour cream 1 tbsp
Rye flour 130 g
Sunflower seeds 100 g
Mineral water (carbonated) 250 ml
Fresh yeast 10 g
Flax seeds 15 g
Rye (ground) 15 g
Barley (ground) 15 g

How to bake grain bread? First, prepare the necessary ingredients. Use premium quality wheat flour. You can replace carbonated mineral water with still or regular water. You can replace fresh yeast with dry yeast at a ratio of 3:1, that is, you will need 3-4 g of dry yeast.

Grind the rye and barley grains in a coffee grinder into fine grains, but not to the point of flour. If it is not possible to purchase grains, you can replace them with an instant multigrain porridge mixture.

Sift the wheat flour into a bowl. Add crumbled yeast and stir. If you use dry yeast, you need one that is added directly to the flour, so read the instructions carefully.

In a bowl, mix rye flour, ground rye and barley, 20 g sunflower seeds and flax seeds.

Pour in sparkling mineral water at room temperature. Add salt, sugar, sour cream and stir.

Add half of the flour ground with yeast and mix. You will get a viscous sticky mass.

Cover the dough with a towel and leave in a warm place to rise for about 1 hour. The dough will rise 2-3 times in volume and become fluffy and airy.

Mix the remaining flour into the dough and knead into a soft, homogeneous dough. The rye flour will make it sticky, so donʼt rush to add extra flour to the dough — the finished bread will be tough and tasteless.

When the dough begins to pull away from the sides of the bowl, use oiled hands to divide the dough into 4 equal portions.

Shape each piece into a log and roll in the remaining sunflower seeds.

Place the pieces of dough in a rectangular pan (mine is 22x11 cm) lined with parchment and greased with vegetable oil, tightly next to each other.

Cover with a towel and leave in a warm place for 25-30 minutes to rise. Bake grain bread in an oven preheated to 190°C for about 40 minutes. The exact baking time depends on the features of your oven. Bon appetit!
