How to make kefir muffins in the oven? Prepare all the necessary ingredients. Take eggs of categories C1 or C0, premium flour. The fat content of kefir should be at least 2%, oil — 70%. Remove eggs and kefir from the refrigerator 1-1.5 hours before. In order for the dough to turn out successfully, they must be at room temperature. Cut the butter into small pieces and melt it.

How to melt butter? This can be done in the microwave on the appropriate setting, over low heat in a saucepan or in a water bath. To melt the butter in a water bath, take two containers of different diameters. Pour water into the larger one, place the smaller one on top so that its bottom sinks about half into the water. Place pieces of butter into it. When the water boils, the butter will begin to melt. When it is completely melted, remove from heat.

Turn on the oven to preheat at 180 degrees. Take a deep bowl in which it will be convenient to mix dry and liquid ingredients. Break the eggs into a bowl. Add sugar, salt and beat them with a mixer or whisk until light, fluffy foam. Adding salt improves the flavor of the muffins and makes beating the eggs easier.

Sift the flour into a separate container. This is necessary in order to sift out small debris and the dough is saturated with oxygen. Add baking powder to the flour and stir until the baking powder is evenly distributed throughout the flour.

The dough should be homogeneous, airy, and the consistency of thick sour cream. Cover the bowl with the dough with a towel and leave for 10 minutes to allow the gluten to dissolve.

Use muffin and cupcake tins for baking. There is no need to grease the molds with anything, since there is enough oil in the dough. Fill them 3/4 full to leave room for the dough to rise. Bake for 30-35 minutes on the middle shelf of the oven at 180 degrees. Please note that cooking time depends on your oven and the size of the pans. The finished muffins will rise and brown.
